Scoville Scale

I've tried to compile the most comprehensive list of the hottest hot sauces and hot peppers on the web. If there is any hot sauce or pepper missing from this list that your think I should add, please contact me and let me know about it. I need to know the Scoville rating for each sauce suggested, as well any other helpful information and links.

Some of the items (especially the one in excess of one million Scoville units and hotter) below may not necessarily be "sauces" you apply directly on food -- they are food additives and should only be used sparingly. The very highest ones are not liquid at all. These are capsaicin extracts and are powders or crystals, as pure capsaicin comes in crystaline form.

You cannot get any hotter. This (and the Blair's 6 AM below) reach the maximum Scoville Rating of 16 million. This is pure capsaicin.

Standard US Grade Pepper Spray
Standard US Grade Pepper Spray

Pepper spray -- also known as OC spray (from oleoresin capsicum), OC gas, or capsicum spray -- is a lachrymatory agent (a chemical compound that irritates the eyes to cause tears, pain, and even temporary blindness) that is used in riot control, crowd control and personal self-defense, including defense against dogs and bears. It is a non-lethal agent that can be deadly in rare cases.

Obviously not for human consumption, I've placed it on here to show how other hot sauces and extracts rate in comparsion to it.

Ott's Wing Sauce
Ott's Wing Sauce
"Everybody loves Ott's Wing Sauce. Great for marinades and cooking flavoring too."

Thumbs up! This is my favorite mild buffalo/wing/hot sauce in the world. It has a creamy, robust, spicy flavor that's unsurpassed. I got hooked on this in the 1990's when Denny's restaurants used to put this sauce on their buffalo chicken strips (sadly, they now use a redder, weaker wing sauce).

I've received word from Ott's that this sauce rates at 727 Scoville Heat Units. It tastes much hotter in my opinion, but it's still mild enough for most people to enjoy.

If you live in the midwest U.S. and see this in your local store, pick up a bottle. If not, you can order a bottle from Ott's Web site linked below. You will not be disappointed!

Please keep in mind that the Scoville heat units listed are just estimates at best. Scoville units for each sauce or pepper may vary greatly due to the seed lineage, season, climate, soil, and other conditions in which the peppers and ingredients are grown.

Comparisons to jalapeño peppers are based on an "average" of 5,000 SHU for the jalapeño, and the high end SHU for the sauce or pepper in question.
